We are a political proposal in defense of food sovereignty.
A space that reclaims the right to consume food from local producers, with a focus on the mountain peasant cuisine. At La Chichería, we believe that cooking, fermenting, and celebrating what is ours are acts of resistance and love.

We are located in Cuenca as a project that bridges the countryside and the city, history and innovation. We are part of the Agroecological Network of the Austro, reclaiming our Andean culinary techniques through contemporary gastronomic experiences that speak of the territory and its people.

Each dish, each glass of chicha, tells a story of land, water, and collective labor. We embrace a conscious contemporary gastronomy that brings the best of local production to the table.

Gastronomic proposal

A gastronomic proposal born from the peasant kitchens of the Andes.

We work with agroecological and seasonal products, sourced directly from farming families in Azuay. Each ingredient carries a name, an origin, and memory — the result of our collaboration with the Agroecological Network of the Austro.

Our food combines ancestral Andean techniques — such as fermentation, sun-drying, and smoking — with contemporary creative cooking processes.

Wednesday to Saturday: 12:30 p.m. – 10:00 p.m. 

Sunday: 12:30 p.m. – 4:00 p.m. 

Monday and Tuesday: Closed
